To continue our series “Behind the Bar“, after the Bonaventure of Maximiliano Vallée Valletta, we present you that of one of our regular collaborators, our Whiskey ambassador Jérôme “Jey” Laflamme. While the goal of this series is to make you discover cocktails that you can enjoy in the best cocktail bars in Canada, you can taste it at Distillerie No. 2 on Avenue Mont-Royal. The story behind Jey Laflamme’s cocktail

So Jey, where does the inspiration for the cocktail come from?

The inspiration comes from Naked and famous (where I get the name Le Peignoir), a Mezcal-based cocktail that is a classic with 4 ingredients, so I’m going to make it a Quebec twist. Every season, there’s always a classic cocktail coming back, I do not know why, but it’s like that, and all the bars make their own version. Last year it was the Paperplane. So for The Peignoir, I took the El Tinieblo, a very smoked Mezcal, very nice, one of the best I know. For the Quebec twist, I use Amermelade, a Quebec appetizer. And I use grapefruit juice instead of lemon juice to go well with the Amermelade and the Chartreuse Jaune, a Chartreuse a little more liquory, more herbal and less strong in alcohol, I like it also only with a big cube of ice as an excellent digestive. I think it’s a cocktail that is very refreshing, very summery, bitter. Perfect to start the summer.

How to make it :

  • Mix the 4 ingredients in a shaker and mix well
  • Double filter in a cup to remove all the pulp from the grapefruit juice
  • Decorate with carnation flowers
